Water spinach is a familiar vegetable in every meals of Vietnamese families. In these hot days, besides some well-known water spinach dishes such as stir fry water spinach with garlic or boiled water spinach, let do some changes to make your family’s meal more attractive and nutritious with water spinach salad. For sure, this dish will be delicious and simple. Everybody is going to like it!
Ingredients:
Original recipe makes 2 servings
- 1 bunch of water spinach
- Peanut: 50g
- Oregano, basil
- Lemon: 2
- Garlic, chili
- Sugar, broth, seasoning powder

Preparing:
- Clean and wash water spinach.
- Fry peanut, then take off the skin and crush it
- Clean all other vegetable and roughly chop.
- Crush garlic, julienne chili. Have the garlic, chili with lemon juice into a bowl with 3 teaspoon sugar, 3 teaspoon broth, mix well.
Directions:
- Quickly dip water spinach in boil water then take it out and put in a pot of ice water. This will help the vegetable keep its green and crunchiness. Then take it out, drain and mix with the sweet and sour garlic chili sauce. Sprinkle peanut on top and the basil mixture, mix well.
