Coming to Ha Tien, tourists will be breath-taking with the nature and many sight-seeing here. However, there are a lot of famous dishes that have attentions from tourists. Among them is Xoi Xiem.
Across Quan Thanh Temple (area 3, Binh San ward, Ha Tien town, Kien Giang), there is a Chinese family sell many strange dishes: Xoi chuoi (Banana sticky rice), green bean sweet gruel, kiem, banh lot, suong sa hat luu (tapioca jelly cocktail)…but the most delicious is heirloom Xoi Xiem. The store owner, Tran Thi Xieu, was born and grew up in PhnomPenh-Cambodia, her parents is Chinese living in Cambodia for a long time and they can speak Chinese, Vietnamese and Khmer.
According to her, the cooking direction is not complicated but it requires experience and the cleverness. Sticky rice has to be steam right, sticky but not flappy not hard, the sauce is sweet, flavorful but not fat. To have a good pot of sticky rice, we need Thai Lan sticky rice at Ha Tien market that was transfer from Cambodia’s border. Thai sticky rice is more sticky and better than Vietnam sticky rice. The rice has to be soaked in 4-5 hours before cooking, then drain with a thin silk, steam in 30 minutes. The stuff inside has egg, beaten well with coconut, Thot Not sugar and Thai Lan sugar. It has to be done in a different pot. This ingredient helps the dish have the full sweetness and strange aroma. People have Xoi Xiem on a plate, then pour the sauce and coconut cream on top of it.
In Ha Tien, there are two well-known Xoi Xiem seller that are Madam Luoi near Viet Toan hotel (Lam Son street, Binh San ward) and Hinh Bich Chau near the church. But only Ms Bay Xieu’s is the most significate. Bay Xieu’s Xoi Xiem is hygiene, flavorful, attractive. The goodness of Thai sticky rice, and the delicious of chicken egg, milk, Thot Not sugar, Thai Lan sugar with coconut cream and spread a bit more durian is making the dish so awesome.
Ha Tien is a place has many cultures. Therefore, the local culinary is very abundant.
