FLYING FISH’S EGG SALAD – DA NANG DELICACY

There are many kind of salad: meat salad such as beef tender salad, pig head sweet and sour salad, intestine salad,… fish salad is more variety. Commonly there is anchovy salad, shrimp salad…Flying fish’s egg salad is rarely heard, or even enjoyed.


“Ca chuon” (Flying fish) is a good kind of fish and easy to cook, it can be cooked with pineapple in soup, laksa leaf or fried, poached. Its flesh is fragrant, bold but the most special is its eggs. To make a plate of fish egg salad, people need a lot of its intestine and must be dried.

Fish egg has to be boiled and drained well. Fresh shrimp is boiled and skinless. Thinly sliced boiled pork belly, crushed peanut. Make a bowl of chili garlic sugar lemon fish sauce. Roughly chopped basil, fry pearl onion.

It should be done when people are ready to be served. Therefore, you can taste all of its valuable flavor. Add fish intestine, meat, shrimp, basil leaf, peanut in a pan and mix well. Season to taste. Place the dish on a plate and sprinkle with fry onion, peanut and cilantro.


The dish is served with rice cake cracker. Only fish intestine is a normal dish, but it is elevated perfectly in the mixture of this salad.
The fleshy fish intestine, sweet shrimp, fat meat. Basil leaf, peanut, fry onion… each ingredient has its own flavor. Each component has completed the dish in a very attractive way. Good dish of salad cannot miss a hot kind of beverage which is wine to sip together.
