The
broth is strongly sweet, covered by a layer of fat crab paste, sprinkle with
some green onion in a boiling hot pot, dipping the water spinach, beef, fry
tofu and fish paste…
Love everything involve with crab, so when I was in
Hai Phong, I have to try the “lau cua dong” (fresh-water crab hot pot). Hoan Ty
store on Nguyen Khang street is the best. The broth is good, a lot of baby
cartilage, crab paste, but the hygiene is not really good.

Another store is 1946
on 63 Cua Bac. “Lau cua dong” is displayed really cool. The broth is a bit
sweet, crab paste is placed in a clay pot. The vegetable is special, too.
Lettuce mixed with banana blossom, and a bit of young water spinach.
But Minh Quynh on Van
Cao street, Hai Phong is actually the best. The broth is sweet and full of
flavor of fresh-water crab, very real. They add on 5 “hot vit lon” baby duck
egg, and mushroom meat balls.

The dipping dishes
are abundant, from live pork paste, young intestine, beef, fry tofu, fish
paste…Hai Phong fish paste is made well, really crunchy and sticky. It’s good
even hot or cool, and you can dip the cool fry fish paste into the hot pot and
it’s even more delicious. Besides vegetable mixture of banana vegetable, we can
also dip “rau mung toi” (spinach). Eating this dish with vermicelli is perfect
but Hai Phong is famous for “banh da” (a kind of rice noodle but has bigger
shape), dip in a bit of red “banh da”, to have sticky bold taste.
